Papa Gille's Potato Salad on Dish Up Delish Some of the very best recipes I have are ones that are passed down through generations and include scribbles, fragmented sentences, confusing instructions, and no true measurements for ingredients. Those are the ones that I know are amazing. Because those are the recipes I know that my grandparents, or beyond, whipped up themselves and jotted down notes to remember, but had everything memorized because they made it so often.   This potato salad happens to be one of those recipes. I don't have clear memories of my Grandpa making this salad, though I'm sure he did and often because it came from him, but I do have clear and fond memories of my Dad making it. He has a few things that are his "food babies" (I made that up for him). Potato salad, marinated Venison steaks (drool), and breakfast foods, are some of his specialties. He never measures, he never follows instructions, he just adds this and that until it tastes right. And it always tastes amazing.   Papa Gille's Potato Salad from Dish Up Delish   It took me several tries to make this potato salad and record the exact measurements to get it to taste just right. Now, it tastes about perfect to me, but I don't have it sitting next to a batch of my Dad's to compare. When I finally figured out the right ratios, measurements, and instructions, the first gigantic spoonful I ate reminded me of home. It was delightful. I knew I had nailed it.   In my mind, this potato salad is perfect potato salad perfection. I love the tangy, zippy, flavor of the sauce accompanied by the crunchy sweet relish, chunks of bacon, and bites of boiled egg. It is truly amazing. So amazing, that I'm actually drooling right now and planning on making it again tomorrow!   If you're not a big fan of mustard based potato salad that has a fun little zip, my good friend Leia, over at Eat It & Say Yum, has a wonderful recipe for a creamy, mayo based, Roasted Potato Salad that is quite delicious as well! Tangy and delicious Potato Salad with bacon, eggs, and a mustard based sauce.

Ingredients
  • 4 medium potatoes, washed, peeled, and cut into bite size pieces
  • 4-6 eggs, boiled (instructions below)
  • ⅓ cup Mayo
  • ¼ cup sweet relish
  • ¼ cup tomatoes, diced
  • 3 Tbsp. yellow mustard
  • 2 Tbsp. vinegar
  • 2 Tbsp. onion, chopped
  • 2 Tbsp. bacon grease
  • 8-9 slices of bacon, cooked
  • ½ tsp. salt
  • ½ tsp. sugar (optional)
Instructions
  1. Fill a large pot with water and add a generous amount of salt, about a teaspoon. Bring pot to a boil and add potatoes. Boil for about 10 minutes or until potatoes are tender.
  2. While potatoes are cooking, place eggs in a separate pot and add water to cover eggs plus an extra inch or two. Place pot on the stove and bring to a boil. Boil for 5 minutes, turn off stove, remove from heat, and cover pot. Let eggs sit in hot water for about 10-15 minutes. Rinse thoroughly in cold water. Crack, peel, and dice into bite size pieces.
  3. While eggs and potatoes are cooking, combine remaining ingredients into a medium bowl. Stir together to mix well.
  4. When potatoes are finished, drain water and add to a large bowl. Add diced eggs into bowl with potatoes and gently mix to combine.
  5. Pour sauce mixture over the top of eggs and potatoes and mix gently to coat potato and egg combination.
  6. Enjoy immediately or refrigerate.
Notes
I usually cook the bacon before I start anything else and set it aside. Then I simultaneously cook the eggs and potatoes. While they are working, I mix up the sauce.

My family loves to eat this fresh and warm the best, but it is also delicious cold the next day after the flavors have been further absorbed.
