I know it's off season for Pumpkin, but I decided I needed to re-photograph these muffins. My first attempt was just that, an attempt. I love apples and I love a good apple crisp. By good apple crisp I mean more crisp than apples. In fact, really just a couple apples with a whole lot of topping. That defines good apple crisp for me. This apple crisp meets and exceeds my expectations of good apple crisp. In fact, when I had a plate full of it last night, I had so much topping that I had to go back and get more apples. Shocker. (I may have also fished for more topping in the first place which caused my problem. Shhhh.)

When I was a kid, I always knew that cold weather was around the corner when my mom made this soup. It wasn't an immediate favorite as a kid, weird, I know, but then we started dipping in tortilla chips instead of saltine crackers and it quickly became one of my favorite's. I'm pretty sure my palate has matured as I have grown older. Perhaps by the time I'm 72 I might actually appreciate caviar.

These Brown Sugar Whole Wheat Muffins are one of my most favorite recipes. They are so easy and so fast to whip up as breakfast, a snack, or a complement to soup or salad.
