When I was a kid, I really hated avocados. Not as much as I hated Salmon, but pretty close. They were just, weird. And green. And mushy. But then one day I grew up and moved away from home. I started trying things like Bacon Avocado Burgers and Turkey Bacon Avocado sandwiches. And suddenly, one day I decided I LOVED avocados. And no, it wasn’t because of the bacon, although bacon makes everything taste better.
Now, I can’t get enough of avocados. I put them in and on anything I can think of: eggs, in smoothies, on salads, in enchiladas, on tacos, in sandwiches, etc. I even really enjoy eating avocados straight up from the skin. I’m not sure how that happened, but it did.
So for any fellow avocado lovers out there, this recipe is for you! These wraps are so loaded with fresh flavor it’s unreal. I especially love making this salad in the middle of the hot summer. It makes me feel light and refreshed, especially with a side of juicy watermelon. My favorite vegetables to use in these wraps are carrots, tomatoes, cucumber, and lettuce, but anything goes. Just don’t forget to add plenty of avocado! If you want to bulk them up a little for dinner, you can also add some grilled chicken. Delish!!
Just one little hint, taste the cheese mixture as you’re making it. You want it to be pretty strongly flavored since it’s the only blend of spices in these wraps. Also, the longer the cheeses sit with the spices, the stronger and better tasting it gets. When you’re ready to build the wrap, slather on a nice, thick, layer of the cheese mixture, add a nice layer of avocados, and then top with whatever veggies you choose!
With all that said, these wraps are quite amazing. And if you still haven’t tried Tortilla Land tortillas, go get some right now!!! I will forever and always be endorsing them (at least until I find something even better, which may not be possible), not because they pay me, but because they are just so darn good!
- ¼ cup cottage cheese
- 2 oz. cream cheese, softened
- 1 tsp. garlic powder
- ½ tsp. dried parsley
- ¼-1/2 tsp. garlic salt (optional)
- dash of cayenne pepper to taste
- 4-5 tortillas
- 1-2 Avocados
- Lettuce, chopped
- Carrots, sliced
- Tomatoes, diced
- Cucumbers, sliced
- Bell peppers, sliced
- Grilled chicken, optional
- Combine cottage cheese, cream cheese, and spices in a small bowl and mix together well. Set aside.
- Prepare and chop all vegetables.
- To assemble, spread a generous amount of cheese mixture on tortilla, layer on sliced avocados, top with desired vegetables. Serve immediately.
